If you’re lucky you’re coziedup by the fireplace or under a soft, warm blanket.Indoor dining at the cafe was closed for a few weeksdue to pandemic restrictions but we were excited totake the chairs down on January 11th and welcomeback our entire team, it wasn’t the same withoutthem. Familiar faces are back in the cafe and thehum of chitchat is a happy sound. There are tastyhot meals here and great company so we encourageyou to stop by.We want to thank everyone who frequented the cafefor takeout and home deliveries while indoor diningwas shutdown, you truly saved us.I know we are all hoping for the return of normalcyin our lives sometime soon. 2 SENIOR ENRICHMENT CENTERWelcome Eric Peter!SAC’s New Kitchen ManagerWe’re happy to introduce Eric Peter as the new Kitchen Manager of the Friendship Café. Eric was hired inOctober and comes to us with a wealth of knowledge and experience in baking and cooking.Eric a!ended baking school at Dunwoody in 1979-1980, and culinary school in 1980-1981. Following that hele" directly for his first appren ceship at a 1500 room resort in Key Largo, FL. He was very fortunate to betrained under the direc on of a chef who was a Gold Medal winner in the Culinary Olympics. His next 3-yearappren ceship was on Kiawah Island in South Carolina, working under the Radisson Corporate Execu ve Chef.To this day, most everything Eric does in his professional baking and cooking career is based on the knowledgeand techniques he gained from these highly trained chefs.In the years a"er that, Eric worked in Minnesota and Arizona, cooking and baking for large distributors, hotels,retails stores, and senior facili es. In 1995, he was awarded the posi on of head chef to 1400 scien sts at theU.S. Navy research sta on in Antarc ca, McMurdo Sta on. When he le" Arizona it was 122 degrees, thenarrived in Antarc ca where the temperature was -87 degrees! Along with working at McMurdo Sta on, threedays a week Eric would cross country ski 3 miles to work at New Zealand’s Antarc ca research sta on, Sco!Base. During his stay the temperature would get only as high as -20 degrees, with sunshine 24 hours. What anexperience!A"er a year in Antarc ca, Eric returned to Minnesota to help care for his mother. He a!ended a year at LeCordon Bleu culinary school, designed the kitchen at Spectacular Events in Isan , and worked there on and offfor close to ten years. Along with that he ran his own company, Catering by Eric, and also spent several yearsdesigning and pu'ng into produc on gluten free products, primarily for grocery stores.And now we are happy to have him here at SAC’s Friendship Café. His goal is to make homemade, scrump ousmeals for seniors and anyone who visits the restaurant. FEBRUARY-MARCH 3Mother Nature put on a striking display for us thefirst part of January. As we looked outside, ourlandscape was gli!ering with white frost. So whatcan we a!ribute this winter wonderland to?Hoar Frost or Rime Ice?The coa ng of ny white needles we experienced iscalled rime ice, which is different than hoar frost.Fog is made up of ny water droplets, and whentemperatures are below freezing, those droplets willfreeze to solid surfaces like trees, crea ng thebeau ful needles of rime ice.Hoar frost on the other hand, o"en forms on clear,cold nights. It forms similarly to dew, except thewater vapor in the air skips the liquid stage andfreezes directly onto surfaces, crea ng a series ofinterlocking crystals. Tender chocolate cake is filled with a warm gooeychocolate center, topped with sweet vanilla ice cream orwhipped cream and finished with op onal fresh berries.Lemon Cream ChickenIf you want an entree that's quick, easy and elegant,you can't beat this one.·········1/2 cup plus 1 tablespoon all-purpose flour,divided1/2 teaspoon salt1/2 teaspoon pepper6 boneless skinless chicken breast halves4 ounces each)1/4 cup bu!er1 cup chicken broth1 cup heavy whipping cream, divided3 tablespoons lemon juice1/2 pound sliced fresh mushroomsDirec ons·1. In a shallow bowl, mix 1/2 cup flour, salt andpepper. Dip chicken breasts in flour mixture to coatboth sides; shake off excess.· 2. In a large cast-iron or other heavy skillet,heat bu!er over medium heat. Cook chicken inbatches un l a thermometer reads 165 , 5-7minutes per side. Remove chicken, reservingdrippings in pan.· 3. Add broth to skillet; bring to a boil. Simmer,uncovered, un l liquid is reduced to 1/3 cup, about10 minutes. S r in 3/4 cup cream, lemon juice andmushrooms; cook over medium-low heat 5minutes.· 4. In a small bowl, mix the remaining flour andcream un l smooth; s r into sauce. Bring to a boil;cook and s r un l thickened, 1-2 minutes. Addchicken; heat through.Baking spray, for spraying custard cups1 s ck bu!er2 ounces bi!ersweet chocolate2 ounces semisweet chocolate1 1/4 cups powdered sugar2 whole eggs3 egg yolks1 teaspoon vanilla1/2 cup all-purpose flourOPT: Vanilla ice cream, whipped cream, berries for serving1. Preheat the oven to 425 degrees F. Spray fourcustard cups with baking spray and place on a bakingsheet.2. Microwave the bu!er, bi!ersweet chocolate andsemisweet chocolate in a large bowl on high un l thebu!er is melted, about 1 minute. Whisk un l thechocolate is also melted. S r in the sugar un l wellblended. Whisk in the eggs and egg yolks, then add thevanilla. S r in the flour. Divide the mixture among thecustard cups.3. Bake un l the sides are firm and the centersare so", about 13 minutes. Let stand 1 minute.Invert on individual plates while warm andserve with vanilla ice cream.Easy and delicious!
