CTP CombithermEnjoy your Alto-Shaam Combi Oven!The combi oven combines a steam and convection oven intoone versatile unit and can serve a variety of cooking functions.Alto-Shaam’s combi ovens allow chefs to control humidity andtemperature separately, with powerful results. The same oven can beused to dehydrate vegetables, roast pork, steam rice, smoke brisketand bake loaves of bread.The PROtouch recipe management system with one-touchcooking provides complete control over the oven, allowing chefsand foodservice employees to select pre-programmed recipes formaximum consistency. To store and secure important information,a HACCP data system pairs up with an onboard USB port, so settingscan be downloaded and saved for the future.When it’s time to clean up, Alto-Shaam’s CombiClean Plus automated cleaning system saves labor previously spent scrubbingthe oven cavity. On the oven’s exterior, a PROrinse retractable hosegives you spray-washing power without opening the oven door.Before UseIf this is the first time this oven is being used, or if the oven has justbeen removed from storage, follow these steps for cleaning:1. Remove all packing material from the oven,2. Remove and wash any detachable items such as wire shelves, sideracks, pans, and drip trays with hot, soapy water. Dry with a clean,damp lint-free cloth.3. Remove all visible grease or oil from the oven.5. Clean the oven glass with glass cleaner or distilled vinegar.Re-install the side racks and wire shelves – position shelves withthe curved end up and toward the rear of the oven.When cleaning is complete, the oven must acclimate to roomtemperature in the environment where it is placed.Twenty four (24) hours is recommended.The oven is now ready for operation.4. Clean the interior and exterior of the oven with a mild soap andwater solution. Apply the solution with a clean, damp cloth. Donot use commercial or household cleaners that contain ammonia.Wipe with a clean, damp cloth to remove all detergent residue. CTP Combitherm The appliance is intended to cook, hold or process foodsfor the purpose of human consumption. No other use forthis appliance is authorized and is therefore considereddangerous. The appliance must not be used to cookfood containing flammable materials (such as food withalcohol). Substances with a low flash point can ignitespontaneously and cause a fire.Knowledge of proper procedures is essential to thesafe operation of electrically and/or gas energizedequipment. The following signal words and symbolsmay be used throughout this manual. The appliance is intended for use in commercialestablishments where all operators are familiar withthe purpose, limitations, and associated hazards of thisappliance. Operating instructions and warnings mustbe read and understood by all operators and users.Alto-Shaam recommends regular staff training to avoidthe risk of accident or damage to the appliance. Operatorsmust also receive regular safety instructions.Indicates a hazardous situation that, if not avoided, willresult in death or serious injury. Any troubleshooting guides, component views, andparts lists included in this manual are for generalreference only and are intended for use by qualified andtrained technicians. This manual should be considered a permanent part ofthis appliance. CTP Combitherm To prevent serious injury, death or property damage,the appliance should be inspected and serviced atleast every twelve (12) months by an authorizedservice partner or trained technician. Only allow an authorized service partner or trainedtechnician to service or to repair the appliance.Installation or repairs that are not performed by anauthorized service partner or trained technician, orthe use of non-factory authorized parts will void thewarranty and relieve Alto-Shaam of all liability. When working on this appliance, observe precautionsin the literature, on tags, on labels attached toor shipped with the appliance and other safetyprecautions that may apply. If the appliance is installed on casters freedom ofmovement of the appliance must be restricted sothat utility connections (including gas, water, andelectricity) cannot be damaged when the applianceis moved. If the appliance is moved, ensure that allutility connections are properly disconnected. If theappliance is returned to its original position, ensurethat retention devices and utility connections areproperly connected. Only use the appliance when it is stationary. Mobileappliance racks, mobile plate racks, transport trolleys,and appliances on casters can tip over when beingmoved over an uneven floor or threshold and causeserious injury. Always apply caster brakes on mobile appliances oraccessories when these are not being moved. Theseitems could move or roll on uneven floors and causeproperty damage or serious injury. Be extremely careful when moving appliancesbecause the food trays may contain hot fluids that mayspill, causing serious injury. Always open the appliance door very slowly. Escapinghot vapors or steam can cause serious injury or death. If the gas appliance is installed under an exhausthood, the hood must be switched On when theappliance is in use to avoid the build up of combustiongases. Failure to do so may result in serious injury,death or property damage. Accumulations on the main burners of gas appliancescan result in firing out of normal sequence. Thisdelayed ignition creates an alarmingly loud sound.If your appliance makes an especially loud noisewhen starting up, shut down the appliance and call aqualified and trained service technician. NEVER place objects near the appliance exhaustvents. This area is hot and could be a potential ignitionsource for a fire. Do not allow objects to block or obstruct the areabelow the appliance base. This may result in fire,damage to the equipment or serious injury. Do not use the attached hand-held hose tospray anything other than the interior of theappliance compartment. Do not use the attached hand-held hose on thesurface of a hot cooking compartment. Thesudden temperature change can damage the applianceinterior. Allow the appliance to cool to a minimum of150 F (66 C).
