With that kindof glassware we can use one glass for thewine pairing instead of many differentglasses, which can be overwhelming. Itbecomes like a show for the client.S.M: Do you think that the quality offood and food service, the atmosphereand the aesthetics of a restaurant havea significant influence on each other?M.C.: I believe that the gastronomicexperience begins with the person’sarrival at the restaurant, not just with thetasting of a dish. Each element--food,service, atmosphere and aesthetics--ispart of a coherent whole that will providea broader and richer experience for thesenses and in the minds of the peoplewho visit us. This year we have renewedthe interior and we continue with work inother areas of the restaurant according tothis philosophy.S.M: Does glass, as a material, havea particular meaning or beauty for youas a chef?M.C.: Of course, glass is a very interestingmaterial for chefs. We can give glasswhatever form and color we wish and wemust use fire to do it!It’s just like cooking.S.M: Where do you most often find yourinspiration for the creative processof cooking?M.C.: Inspiration is an unanticipatedprocess, which cannot be predicted, butin my case most of the time inspirationcomes from the ingredients I find inthe gardens, or that I discover in themarket. From there, I like to play with newcombinations. I work with the organolepticproperties of the ingredients, but alsoI think about their origins, the historyrelated to each ingredient, and the way weusually work with it.S.M: Like people, restaurants probablychange naturally over the years, butMirazur just keeps winning awardslike this year’s Best Restaurant 2019award. What do you think has been thekey to maintaining your successover time?M.C.: The secret is to always evolve. I’venever worked for the prizes, to follow theachievements of others. I work to feel freein my creations. I work to meet people andmake them experience a unique moment.Not being afraid to follow your ownpassion is the key.S.M: In 2006, how did you originallywant the gastronomic experience tofeel at Mirazur? What influenced orinspired you while you were creating theconcept?S.M: Besides Mirazur, I know thatyou also own a chain of Argentinehamburger restaurants, Carne. Whatattracts you to owning these two verydifferent types of restaurants?M.C.: Although Mirazur has evolvedover time, I had the idea from the firstday: I did not want to offer just dishes tocustomers, but a real experience. I wantedto offer a “trip” and for the customer totrust me and let himself be drawn into theexperience. It is a challenge that, for me,requires great responsibility and creativityto support customers in their desire tobe surprised. In a menu there is muchmore than ingredients. There is emotion,associations that will occur in the memoryand the personal and unique universe ofeach person in the encounter with a smell,a color, a texture. For me, this is “the trip”.M.C.: For me, there is good cuisine andbad cuisine. The important thing is notthe public but the values. We always cookaccording to the same principles--usingonly excellent ingredients and respectingnature--whether it is for a wide audienceor haute cuisine. The foundation is thesame.

YAIR HAIDUThe Master of Elegant TastesYair Haidu is not only a wine expert but also managed The Israel Wine Academy in hisnative land in the 1990’s. The Israeli-French Haidu studied at Hebrew University inJerusalem, even creating wine lists for the airline El Al before working for the Austrianglassware company Riedel, handling retail in Europe from 1999-2006. He is nowbrand consultant for Nude. There he helps strategize, consult and contribute to thedevelopment of designs including new wine glass collection Stem Zero Master Glass.Melissa Feldman: What’s your experience been when working with glassmakers?Yair Haidu: I love to work with glassmakers. There is something very special when workingwith creators in a field that hasn’t changed in thousands of years. In an expandingtechnological world it’s inspiring to see a profession that has remained intact sincethe Bronze Age. The thing that has always impressed me is the willingness to constantlychallenge the possibilities, even when at times the request seems to defy the laws ofphysics. The working conditions nearing furnaces of over 1000 degrees, pipes, andmelting liquids are truly arduous and finding them with a positive attitude, and to makeexperimental work is something I will always appreciate.M.F.: What exactly was the original inspiration for the Stem Zero Master GlassCollection?Y.H.: Although I love complexity, I hate complication. There is a spot in which by trying tobe too perfect and too detailed we lose everyone. It is the case with wine glasses andalthough every glass will make the same wine taste different, there is a point in whichwe have to stop complicating things and search for the simple, which paradoxically isalways the most difficult thing to do. This glass was created for either wine professionalsseeking an all-around instrument to taste wines on the go or for people who cannotafford to keep different glasses for every wine they encounter.M.F.: What was your thinking regarding the design and shape of the Stem ZeroMaster Glass Collection?Y.H.: When looking at the glassware, the collection had to bring clarity and simplicity. Iwanted to inspire confidence in our customers so we looked at fine-tuning four types ofglasses you need; two white and two red. And we made sure to not name them by theirgrape varieties. For the whites we called one Delicate and the second Full-bodied.For the red, we have a glass for Elegant and one for Powerful red wines. The Master isa unique glass within the Stem Zero line. We realized that for many people who lovewine, they might need more than four glasses. This glass could not be too large, but smallenough to carry into restaurants and tastings. The Master is more professional and workswith all varieties. It’s the best for one glass.M.F.: How did you interact with the design process for Stem Zero?Y.H.: The design process is very specific when understanding the glass shape while stillattempting to be original and create something new that wasn’t done before. Weplayed with the design on the drawing board, then 3D printer, then we gave it to thedesign team and they created a mold.M.F.: Did you do tastings with theprototypes before going into production?Y.H.: We had the opportunity to do sometastings. I was able to observe wherethe competition failed and was lucky tocreate glasses with enough time with theopportunity to modify, but ultimately did notfeel the need to modify. Today when I tastewith wine, the glasses feel like they werecreated in the right proportions.M.F.: What types of decorative objects doyou incorporate on to your table?Y.H.: I love flowers so vases are imperativeon my table. Candleholders are not aprerequisite but on the romantic table, Istill opt for the natural shimmering light ofcandles. Decanters are also decorativeobjects I love to play with during dinnerand I love playing with materials, that iswhy Alba by Nude which combines marbleand crystalline is one of my favorites.

They are languages that promote self-expression in infiniteforms but, at the same time, are understood by anyone and everyone.Hand-illustrated in editions of 10, the Rock & Pop series of designerAli Bakova's Memento Mori skulls is an artistic collaboration that imbueseach piece with the emotion, artistry and immediacy of theseinspirations. By making their mark on the luminous surfaces of Bakova'sskulls, graffiti writers Cins and Kien, tattoo artists Erensu Ekmekcilerand Luca Font, and illustrators Sena and Umut Karaman have turnedhigh culture and craft into a canvas for street art and fashion. In the end,it takes icon-busting to create an icon. It takes courage, rule-breakingand creativity to make one's mark on the street. Nude celebrates thecomplexity--on the street, in glass, or inside ourselves--that it takesto create something genuinely new, unique and perfectly simple.‘Pop and rock means the 1980s to me,’ says illustrator Umut Karaman.‘My personality as a designer was developing in the 80s and the musicleft marks on my life.’ Karaman also designed patterns to be used onvases & glasses for Nude Rock & Pop collection. The pieces play withneon colors, bold shapes, dynamic figures, simple 1980s-echoing lines,and the spirit of pop and rock.

11OPTI &LAYERSShonquis Moreno: Where do you mostoften find your design inspiration?Defne Koz: My design always tries toawaken the senses, to evoke subtleemotions with deep, rich materialsand shapes. All my designs for Nudeuse glass to explore different kindsof sensations, mostly visual, but alsotactile sensations through the use oftextures and surface patterns. Myinterest is to develop a multi-sensorylanguage and create immersiveexperiences that engage the wholebody and the whole mind.by Defne KozS.M.: You’ve worked with glass manytimes. Is the material special in anyway, in your opinion?D.K.: I learned that glass is transparentbut not invisible, that’s a bigdifference. Even when the materialitself is neutral and transparent, it’snot the absence of sensation, butthe addition of many sensationsNude has been working with Defne Koz since 2017, when the brand launched her Layers vase collectionin Palazzo Litta during Milan Design Week. This year, Nude introduced her Opti vases and centerpiecein Ambiente. Based between Milan and Chicago, Koz’s work combines her Turkish origins with a love forItalian culture, while investigating a wide range of product types. She recently received the Elle Decothat are ever-changing, difficult tograsp because they change with thelight hitting from different angles.Glass is rich and mysterious, and youperceive it differently every time. Forthis reason, every time I work with thematerial, I try and explore one of itsmany attributes: reflection, refraction,translucency, fade, texture, layering,and color.S.M.: What was your inspiration forthe shapes and the lovely texture ofOpti Collection?D.K.: Opti is all about textures,the surface of the vases is‘micro-pleated’ to create an opticalillusion, a visual vibration of thesurface. In the transparent versionof Opti, the texture is amplified bythe refraction of the material, in theversions in colored glass this createsa kind of color moiré.Turkey Designer of the Year award and, for Layers, the German Design Gold Award 2019.“GLASS IS RICH ANDM YS T E R I O U S , A N DYO U P E RC E I V E I TD I F F E R E N T LY E V E R YT I M E .”S.M.: What flowers do you put in Optivases?D.K.: I put a large bunch of yellow mimosasin the first prototype of Opti that I got inmy studio. The small yellow flowers createa cloud of texture that dialogues very wellwith the texture of the glass vase.S.M.: How do you think about choosing acolor palette when you’re working withglass?OPTISee at p.66-67D.K.: Layers vases are based on transparentlayering, so I selected colors that work nicelyin addition to each other, like overlappingcolor filters. For Opti collection I selectedvery ‘native’ glass colors, like clear andsmoke green, because they work well withthe texture of the surface.S.M.: Is there any object you would liketo design in glass, in particular, that youhaven’t done yet?D.K.: A car. Maybe it sounds crazy, becausewe’re used to thinking that cars need to bestrong, metallic, protecting us from crashes,but there was a period, between the ‘60sand the ‘70s, when designers were openingup the living space of cars with much largerwindows and using glass in a very innovativeway. Today only a few cars are designed‘from the inside out’, to give a great qualityof life inside. Considering the progress inglass technology, I’m sure we could createa great sense of openness, and a strongerconnection between inside and outside, withextensive use of glass in a moving vehicle.

13Space Copenhagenon SilhouetteDanes Signe Bindslev Henriksen and Peter Bundgaard Rützou are graduates of the Royal Danish Academy of Fine Arts.The pair launched Space Copenhagen, their design firm in 2005 where they work across disciplines, producing furniture,lighting and objects for interiors for residential and hospitality projects. The couple often use natural materials, and asubdued color palette that highlights craft. Space Copenhagen’s clients range from international manufacturers includingGeorg Jensen, GUBI, Stellar Works, and Fredericia Furniture. Restaurant and hotel projects include 11 Howard, NewMelissa Feldman: Have you worked with glass before?Space Copenhagen: It is our first time working with glass, and theglass itself and the complexity of the craft techniques behind it isdeeply fascinating to us.M.F.: What was it like working with the Nude team?S.C.: Our collaboration with the wonderfully skilled craftsmen atNude has been truly inspiring. Whether fused, cast or blown, thesheer immediacy of the process, the intensity of coaxing moltenglass into these exquisite precise forms is quite unique and unlikeanything we have experience with.M.F.: What’s your approach when combining form and function?What other types of foods are you imagining would work in thesevessels?S.C.: Every case is different. Here, we were interested in how toeffortlessly convey a welcoming, generous gesture in the form. Thesmall family of individual bowls, yet compatible base identities canbe used in different ways and common for the them all is their openand inviting and generous shape. Our intention was to create avery flexible collection. In the process, its fluid andtransparent nature quickly became almosta fourth dimension witha constant interplay between edge,volume and curve, and techniques thatS.C.: We see so many amazing possibilities,whether glass, vases or larger free formobjects, which could be really interestingto explore.M.F.: Do you like cooking? If so what inspecific? Fish perhaps?S.C.: For both of us cooking isa wonderfully relaxing, social andsometimes almost meditative endeavor,something that takes you out ofa busy professional life and intoa sphere where it’s about this ritual andexperience. We love the Mediterraneanand Asian way of sharing a meal, together,passing the bowl or plate along, a lotof choice, many dishes on the table,that whole interaction around the tablethroughout the meal.M.F.: Do you have a favorite restaurantbesides the ones you’ve designed? And why?S.C.: We work with restaurants fora living, and seek out food experiencesall the time, both here in Copenhagenand when traveling. So, to us culinaryexperiences are so intrinsically tied tothe place you’re at, the mood, you’rein, the people you’re with, that singlingout a favorite wouldn’t be fair. It couldbe amazing dumplings in a side streeton Lower East Side, fine dining inCopenhagen, or fresh fish in a modestfamily restaurant in Milan.
