This kind of heating differs fromconventional heating, as the microwave energy issupplied on a molecular level. The MicrowaveVolumetric Heating (MVH) makes use of polarity ofcompounds which are present in the fluids as well aspermanently change ions to cause frictional heat bymeans of an oscillating electric field.16

The Dynowave – AMT 4 consists of a stainless-steelcabinet, which is divided into the electrical andprocessing cabinet.Electrode panels cover a treatment area 0.45 m2and can be adjusted up to 30 cm from the conveyorbelt to allow the treatment of a variety of differentsized food products as well as the conveyormaterial. The peripherals of thedevice are mainlyconsisted of theproduct pump, a stirrer,a chiller, a vessel withmixer, measuringdevices and valves. The materials used areall stainless steel orfood grade coated(Teflon).
