HEALTH & WELLNESSDietary Guidelines for AmericansSodexo’s Fall 2015 menus for residentdining will continue to include non- andlow-fat dairy, seafood, legumes, nuts(where allowed), fruits, vegetables andmany new whole grain recipes. This fall, the 2015 edition of the DietaryGuidelines for Americans will be published. The guidelines encourage individuals to eat ahealthful diet to achieve and maintain a healthyweight, promote health and prevent chronicdisease. The Dietary Guidelines have identified five“shortfall” nutrients: vitamin D, calcium, potassium, fiber and iron. Fruits, vegetables, whole grains and dairy food groups areexcellent sources of these nutrients.Sodexo’s Mindful standards support thesegoals through providing skim or 1% milk, fruits, whole grains and multiple vegetables. The U.S. Department of Health and HumanServices (HHS) and the U.S. Department ofAgriculture (USDA) jointly publish the DietaryGuidelines every five years. The DietaryGuidelines form the basis of federal nutritionpolicy, education, outreach and food assistanceprograms used by consumers, industry, nutritioneducators and health professionals. Mindful bySodexo is built on the Dietary Guidelines. The 2015 Dietary Guidelines committeesingled out the benefits of plant-based foodsand developed a new Healthy VegetarianFood Pattern. Sodexo’s resident diningprogram meets the needs of studentsalready committed to a vegetarian or veganlifestyle, while inviting all students to tasteinteresting global plant-based dishes.A healthy diet is described as: High in vegetables, fruit, whole grains, seafood, legumes and nuts Moderate in low- and non-fat dairy products Lower in red and processed meat Low in sugar-sweetened foods and beveragesand refined grains. For the first time, the Dietary Guidelines arehighlighting sustainability as an essentialelement of food security. The health benefitsof seafood are highlighted, along with aconcern about sustainability. Sodexo’s BetterTomorrow Plan commitments emphasizesustainability, with specific and accountablecommitments to sustainable seafood. The Dietary Guidelines convey a vision ofcommunities where healthy, affordable foodsand beverages are available to everyone, where healthy foods rather than unhealthyfoods are the likely choice, and where socialnorms embrace and support healthy eating. This culture of health is essential in thecollege and university setting.
