Important SafeguardsW Do not remove the Baking Pan duringoperation. Press START/RESET and hold untilyou hear a beep if you need to stop operation. Do not pour any ingredients directly into theBreadmaker—only into the Baking Pan. It isimportant to remove the Baking Pan from theunit before putting ingredients into the Pan(except when using the “Add-Ingredient”function, see pg. 10) to avoid accidentallyspilling ingredients into the oven chamber. Before operating, the Baking Pan must be inplace to avoid electric shock. Place the Breadmaker at least 2 inches awayfrom any walls or from under cabinets to allowfor steam from vents. Do not cover the Breadmaker with towels orother material that may prevent steam fromescaping. Some steaming from vents is normal. Do not clean with scouring pads. Pay particular attention to thesafety instructions provided for your protection.Review the product warranty and service statementsand fill out and mail in the owner registration form.Carefully unpack the Breadmaker and removeall packaging materials. To remove any dust thatmay have accumulated during packing, wipe theBaking Pan, Mixing Paddle, and outside surface ofthe Breadmaker with a clean, damp cloth. Do notuse scouring pads or any abrasives on any part ofthe Breadmaker.POLARIZED PLUGThis appliance has a polarized plug—oneblade is wider than the other. To reduce therisk of electric shock, this plug will fit into apolarized outlet only one way. If the plugdoes not fit fully into the outlet, reverse it. Getting To Know Your Breadmaker An “Add-Ingredient” function signals withbeeps when it’s time to add ingredientssuch as fruits or nuts to recipes used with anysetting except Rapid Bake. A beep signals beforekneading is completed to let you know when toadd ingredients. This feature helps keep fruit ornuts whole (See “Add-Ingredient Function”pg. 10 for more details). If you use the TIMER todelay baking, you may add all ingredients atonce and bypass this function, however, yourfruit or nuts may get “chopped” and blendedinto the bread. Do not cover the breadmaker with towelsor other material that may prevent steam fromescaping. Some steaming from vents is normal.Because of escaping steam, you should keep thebreadmaker several inches away from cabinetswhile making bread. Do not place any objects on top of thebreadmaker. IMPORTANT: Add ingredients in the order theyare specified in the recipe. For best results,accurate measuring of ingredients is veryimportant. Do not put larger quantities thanrecommended into the Baking Pan as it mayproduce poor results and may damage thebreadmaker.Quick Tips Your breadmaker makes large 1.5 or extra large2 lb loaves. There are five settings including one fordough or pasta. The “Rapid Bake” setting can producevariations of basic white bread in less than2 hours. This setting can only be used withrecipes supplied (see pg. 20). You cannot use thetimer with this selection. This setting cannothandle heavier recipes such as whole grainbecause of its shortened rising cycle. Depending on the recipe you select, the“Dough/Pasta” setting will let you producedough that can be shaped into dinner rolls,pizza, long loaves, challah, pretzels, filled braids,or more. For Pasta, be sure to use pasta orsemolina flour. Pasta dough should beprocessed through a pasta maker or pastashaper to form the desired shape. Consult theCookbook section of this manual. The Crust Control function lets you choose“Regular” or “Dark” crust on the Basic, RapidBake, or Sweet settings. It cannot be used on theWhole Grain or Dough/Pasta settings. The “Keep Warm” function begins automaticallyafter bread is baked. If you do not removethe bread after 60 minutes, it will simply remainon to show you that the unit is still plugged in. The green “timer” light indicates that the timerfunction is on. When the actual breadmakingoperation begins, the green light will go off, andthe red light will come on. The black arrow at the right side of the displayindicates your bread setting choice; the left sidearrow indicates the Dough/Pasta setting andCrust Color choices. When set, the digital clock will show either thecurrent time of day, or, when the breadmaker isoperating, the time it will take for your bread tobe completed under the selected setting. Bread Type Setting DescriptionsRAPID BAKE/Regular Crust orRAPID BAKE/Dark Crust (1:58 hours)DOUGH/PASTA (2:00 hours)This setting makes bread-style dough and pastadough. Dough can be shaped to make pizza, rolls,pretzels, long loaves or braids that must then bebaked in a conventional oven. It can also preparepasta dough that must then be processed andshaped through a pasta maker. Pasta dough shouldbe removed from the Breadmaker after the“Add-Ingredient” signals (in 40 - 45 minutes).Follow pasta recipes on page 30 forspecific directions.This setting is used only to make variations of basicwhite bread quickly whether you choose a “Regular”or “Dark” crust. Refer to the recipe section of thisbooklet for a complete list of all recipes that can beused with this setting. This setting cannot be usedsuccessfully to make breads other than thosespecified due to the shorter rising time of this cycle.SWEET/Regular Crust orSWEET/Dark Crust (3:50 hours)Use this setting for recipes that use fruit juice, largeamounts of sugar, cheese, or added sweetingredients such as raisins, dried fruit, or chocolate.Baking temperature is lower to prevent burning.WHOLE GRAIN (4:10 hours)This setting is used for recipes with significantamounts of whole wheat or rye flour, oats,or bran. This setting has a longer rise cycleand preheat cycle to allow heavier grainsto expand. Generally, whole wheat/multi-grainbreads are shorter and denser than Basic or Sweetbreads. You cannot use the Crust Color selectionswith this setting.How To Use Your Breadmakerhe four bread making settings in this unit willcombine ingredients, knead, and bake breadfrom start to finish – automatically. TheDough/Pasta setting makes dough for a variety ofrecipes but you must shape and bake the doughyourself in a conventional oven or process it in apasta maker. To delay completion, the AutomaticTimer may be programmed to make bread while youare at work or asleep. (See “Setting the Timer” pg. 10)Tgood to excellent results in this Breadmaker; whereasAmerican “All-Purpose Flour” will produce poorresults.The Cookbook section of this book includes recipesthat have been thoroughly tested in Black & Decker’sown test kitchen to ensure best results in both theUnited States and Canada. Flours, cornmeal, and afew other ingredients vary widely betweenthe two countries.NOTE: The term,“All-Purpose Flour” for example, isapplied to two totally different types of flourdepending on whether it is purchased in the U.S. orCanada. Canadian “All-Purpose Flour” will produceMost North American national brand flours andyeasts will produce good results. Keep in mind thatthe recipes included here have been created by ourHome Economists specifically for this automaticbreadmaker (Model B1620) and may not produceacceptable results in other similarbreadmakers.Therefore, each recipe is presented with two sets ofingredients –one for each country. How To Use Your BreadmakerInaccurate measurements, even if only slightlyoff, can make a difference in results.For all SETTINGS (includingDough/ Pasta) follow theseinstructions:1Open the lid, grasp the wire handle with twohands, and turn the Baking Pan to the left“Unlock” position, then remove it by pullingstraight up on the handle. It is important to remove Yeast is always added last. Be sure that theyeast does not touch the liquid ingredients, saltor shortening.All-In-One Deluxe Automatic4The Baking Pan can be installed in TWOPOSITIONS. There are notches on two sides ofthe rim of the Baking Pan. Be sure to have anotched side facing toward you when you put thePan into the oven chamber. How To Use Your Breadmakerkeep bread warm during that time. At the end of thehour, the Keep Warm cycle will end and the lightwill remain on constantly, indicating the unit is stillplugged in. The bread should then be removed assoon as possible to avoid getting soggy. You mayremove the Baking Pan any time during the KeepWarm cycle. To turn off the Keep Warm featurebefore the 60 minutes are up, simply press theSTART/RESET button and hold it until the displaytime clears.5Close the lid and plug into an outlet (120 volt). TwoARROWS will come up in the display window indicating BASIC BREAD TYPE with a REGULAR crust and12:00 AM will flash in the display window. If you wishto use the TIMER to delay baking, you will first have toset the correct time of day. However, if you want tostart the breadmaking operation now, it is not necessary to set the CLOCK.6To bake a Basic loaf of bread with a RegularCrust, simply press the START/RESET Button.However, you can choose a different setting for your recipe bypressing the BREAD TYPE button on the pad. Each time youpress BREAD TYPE, the arrowin the display windowwill point to the nextselection (i.e. RapidBake, Sweet Bread,etc.) If you are using arecipe that calls for theBasic, Rapid Bake, or SweetBread setting, choose a crustcolor by pressing the CRUSTCOLOR button untilthe arrow in the window lines up witheither “Regular” or“Dark.”7Press the START/RESET Button once until itbeeps and the red “on” indicator light comes on.The flashing 12:00 AM will bereplaced by, for example, 3:50, ifyou chose a recipe for the BasicBread setting (regardless ofwhether you chose “Regular” or“Dark” crust). It willcount down theremaining time in oneminute intervals (3:49,3:48, etc.) until thebread is done. Whenthe baking is complete, several beeps will sound toalert you that the bread is ready and the red indicatorlight will begin flashing. In addition, a flashing 12:00AM will reappear in the display screen.NOTE: The Keep Warm feature does not function forthe DOUGH/PASTA setting since baking is notinvolved in this program. If you leave finished doughin the unit over a period of time, it may over-rise andproduce poor results. For best results, remove doughat the end of the program and follow the recipedirections for shaping, rising, and baking.9This unit has a convenient Viewing Window sothat you may watch the progress of the bread asit is mixed, kneaded, and baked. Occasionally, somemoisture may form in the window during the risingcycle. If moisture forms, you may lift the lid to lookinside during the mixing and kneading stages,however, DO NOT OPEN THE LID DURING THEBAKING CYCLE (approximately the last hour) asthis may cause the bread to underbake. Most of themoisture should disappear during the baking cycle.10To remove the Baking Pan, use pot holders oroven mitts, grasp the wire handle with bothhands and turn the Pan to the left until the notch inthe pan lines up with the unlock arrow on the backwall of the oven chamber. Pull straight up on theBaking Pan. Fold and lock the wire handle down.Turn the pan on its side and gently shake the breadout onto a wire cooling rack. The Baking Pan andMixing Paddle have a non-stick coated finish so thatthe bread should come out easily. Do not use metalutensils to remove bread as they may scratch thenon-stick coating. If you have difficulty removingbread from the Baking Pan, slide a flat rubber orAll-In-One Deluxe AutomaticCLOCKBREADTYPE8This Breadmaker is designed with a Keep Warmfunction that automatically begins when bakingis complete. NOTE: TheTIMER cannot be used with the Rapid Bake on or rubber spatula to remove the paddle. Donot use a knife or other sharp metal object as thiswill scratch the non-stick coating on the MixingPaddle.To set the TIMER, follow these instructions:Using The “Add-Ingredient”Function1All settings, except for Rapid Bake, have a builtin “Add-Ingredient” function which signals withbeeps when it’s time to add ingredients such asfruits or nuts. The actual time of the beeps can varyup to 5 minutes depending on the room temperature at the time when you started the bread makingprogram. It is not recommendedthat you use the “Delayed Completion” function andTIMER with recipes that call for fresh ingredients thatmight spoil such as eggs, fresh milk, buttermilk, orcheese.To use the TIMER, you must first set the digitalclock to the correct time of day. To change theflashing 12:00 AM, first press the CLOCK button.While the “12”is flashing, the hour can be set byimmediately pressing the “Up” and “Down” arrowsto change the time in 1 hour intervals. Make sure the“AM” or “PM” displayed is appropriate. While thecorrect hour is flashing in the display, press theCLOCK button again to set the minutes. If the hourdisplay has stopped flashing before the minutes havebeen set, press the CLOCK button twice. While the“00”is flashing, the minutes can be set by pressingthe “Up” and “Down” arrows. You may hold eitherarrow to rapidly change the time in 5 minuteintervals, or press and release to change 1 minuteat a time.Once the clock is set, the TIMER can easily be setfollowing similar steps.
