Cover the bowl and let the almonds soak forat least 8 hours or overnight. Drain the almonds andplace in the soup maker, fill with 4 cups of water andplace the cover the soup maker on top.Press the soymilk button to start the machine. Oncethe machine has finished running, carefully removethe lid and pour the puree into a large bowl fitted witha fine mesh sieve. Push the almond pulp through thesieve to drain out the milk.If desired, you can run the milk a second time throughcheesecloth or a nutmilk bag for a finer strain. Oncethe almond milk has been strained and the residuediscarded, stir in the vanilla extract. Transfer thealmond milk to a glass jar or bottle and refrigerate.Almond milk will stay good for about 1 week in therefrigerator.
