To Chop or Not to Chop?Cut off any damaged sectionsor tough ends while leaving mostpeels on. With Oscar’s exclusivepatented extraction process, morenutrients including those in the skinof produce are available.Remove hard pieces such as thecore and stalk of the pineapplebefore juicing. Cut the produce soit fits into the feeding chute.With continuous juicing available,the feeding chute can take anylength. If you buy smaller, youngcarrots, you don’t need to chopthem at all; they can go in whole aslong as they fit down the chute. It’sonly the width that needs chopping,not the length.So you need to chop beetroot andapples but not young carrots, smallvarieties of cucumbers, celery,silverbeet or other leafy greens.What About Soft Fruits?The technological improvements inOscar are geared towards healthand Oscar thrives on the fibrousroughage found in vegetables andgreens which are naturally high inchlorophyll.When juicing your soft fruits, youwill find it works best to alternatethem with some carrots, celery orother hard vegetable. Somevarieties of nuts don’t havehigh oil content so if you wanta creamy butter, add nut orolive oil until you reach thedesired consistency.Another hint for a creamybutter is to pour in the nutsslowly and alternatively, forcrunchy nut paste pour in thenuts faster. Relatively soft nutssuch as peanuts, pine nuts,macadamias and cashewsmay be poured in withoutsoaking.

Form into balls and roll in coconut. Stop the machine and add the Vitamin C powder andenough olive oil to the peanut paste to make a nice soft spreadingconsistency. Pasta & NoodlesThe Oscar neo can make pasta simply by replacing the juicing screenwith the mincing screen. The pasta dough bypasses the juice outlet andis pushed out through the drum cap and one of the 6 pasta nozzlessupplied.Freshly made pasta is such a treat, so much so that you may find itdifficult to eat packet pasta every again. You also know exactly what isgoing into the mix. There are many varieties of ingredients you can try,mixing in beetroot, carrot or other types of juice to give a vibrant colour.Hints and Tips for Pasta Making Add an egg and a few drops of olive oil to your mixture tohelp prevent it from sticking together Have a floured tray to lay it on when it comes out of themachine If making spelt or semolina pasta, reduce the amount offlour used or the dough will be too stiff

Cheeky PastaFirstly, set up your Oscar with the mincing screen and desirednozzle for fettuccine or round noodle. On you clean kitchenbench or in a large bowl, pour out a couple of cups of organicflour.Add half a cup of warm water or vegetable juice and 1/2teaspoon of sea salt (which acts as a rising agent). Keep themixture dry, not too sticky. Break into balls and feed into thechute. As the strands of pasta come out of the machine, cutthem off and lay on to floured tray. Repeat process until dough isBoiled Rice NoodleAn ideal way to use left over rice is to make rice noodles. Mix ricein a bowl together with a little sea salt and warm water.Feed the mixture into the machine and cut at desired length. Cookin boiling water for 3-5 minutes. Add desired vegetables and Asiansauces.

Sweet TreatsWhat a wonderful way to use excess fruit by freezing and makingdelicious ice creams and sorbet style desserts. Freeze fruit without skins, stones or seeds and cut into pieces that fitinto the feeding chute. Remove frozen fruit from the freezer ten minutes before you plan touse them so the hard ice crystals have melted. Mixing frozen banana with other fruits will give a creamy consistency. For sorbets use any frozen fruit without bananas and let yourimagination flow free.

Making Bean, Rice & Nut MilksSoak soybeans, rice and/or nuts in water (nuts & soybeans for aminimum of 8 hours).Rinse and drain. Make a mixture of beans, nuts, rice, water and ifdesired, fruit / vegetables.Using the mincing screen, feed the mixture into the chute simultaneouslywith a small amount of water.This works best using a large spoon and scooping the mixture from acontainer.To reduce sediment, place a sieve over the collection bowl or strainthrough a muslin cloth.This will make flavoured bean, nut or rice milk. If using soybeans, theresulting mixture can be used to make tofu. For flavoured milks, try thefollowing ideas Add berries, banana and other fruits Add a small amount of salt and/or sweetener eg; raw honey ormaple syrup Add vanilla and a pinch of cumin, nutmeg, cinnamon or cardamomTofu Recipe Add a small amount of salt to soy juice if you haven’t already and boilwhile stirring continuously. Add the curdling agent (coagulant) to the boiled soy juice and let standfor 4-5 minutes while it curdles. Remove the excess water by squeezing it with clean, food-grademuslin.
