Cheese SouffleServes 6175g mature cheddar cheese, crumbled6 Free range eggs, separated500g crème fraicheCayenne pepper to taste1 garlic clove, crushedSea salt and cayenne pepper to taste2tbs melted unsalted butter50g freshly grated Parmesan cheesePinch of freshly grated nutmegZest and juice of 1 lemon1Place the cheese, egg yolks, cayennepepper, salt and crushed garlic in a foodprocessor or blender (a bowl and stickblender will also do the job) and blitzuntil smooth in texture.2Add the crème fraiche and blitz againuntil well blended in.3In a spotlessly clean stainless steel bowl,whisk the egg whites until they form stiffpeaks and then fold this into the cremefraiche mixture.4Line the inside of each of the 6 ramekinswith butter and then sprinkle in theParmesan cheese to adhere to thebuttered sides and base of the ramekinsshaking out the excess.5Pour in the liquid into each ramekin andfill to the ¾ level.6Place on the lower rack in the halogenoven and set the timer to 12 minutes,and the temperature knob to 180ºC.Bake until golden brown and nicely risen.7Sprinkle with the grated nutmeg andserve immediately.Halogen Oven Recipe BookPage 5

Bread and ButterMarmalade Pudding75g unsalted butter75g sultanas3tbsp dark rum10 slices brown or white bread1tbs ginger marmalade4 egg yolks1 egg medium3tbs caster sugar500ml double cream200ml full fat milk1tsp ground ginger2tbs demarara sugar1Put sultanas in bowl with the dark rumand microwave for 1 minute.8Pour the egg mixture in with the creamand milk.2Stand and cool and leave to soakfor 1 hour.9Pour over the bread and leave to soak for4 hours.3Butter both sides of the bread with themelted butter.10 Brush the crust with the mixed gingerand demerara sugar.4Spread 1 side of each slice with themarmalade.5Cut in triangles and layer in a roundcake pan.11 Place in the halogen oven on the lowerrack setting, turn the timer switch to 30minutes and then turn the temperatureknob to 195 C.6Mix in the rum flavoured sultanasbetween the layers of bread.7Whisk the egg yolks and egg togetherwith the caster sugar.Page 612 Dust with demerara sugar and dot withbutter, then serve with fresh cream.Halogen Oven Recipe Book

Raspberry, blueberryand blackberry PavlovaServes 63 large egg whites185g caster sugar2tsp vanilla extract½ tsp white wine vinegar1 rounded tsp cornflour1 x 300ml tub of double cream375g mixed raspberries, blackberriesand blueberries, washed and drained1In a spotlessly clean stainless steelmixing bowl, whisk the egg whites usingan electric hand mixer until the eggwhites are stiff in texture. Now graduallyadd half of the sugar and beat into theegg whites until well blended in andglossy in texture.2Fold in the remaining sugar along withthe vanilla extract, white wine vinegarand the cornflour.3Now place the mixture into a piping bagwith the appropriate nozzle and pipe themeringue mixture, starting at the centreof the silicon mould and swirling aroundin a circular motion to cover the wholebase. Go around the edge again to give araised border.4Place in the halogen oven on the lowerrack and set the temperature to 150ºCand the timer button to 60 minutes.The meringue should be crisp and dryto the touch, if not bake for a fewminutes more.5Allow to cool slightly in the silicon mouldbefore transferring to a cooling rack.Allow to cool completely.6When the meringue is cold, whisk thecream in a mixing bowl using a whiskuntil firm peaks form. Carrot and banana cakeFor the cakeFor the icing2 large ripe bananas, mashed, using a fork150g Philadelphia cream cheese175ml sunflower oil100g icing sugar, sifted150g soft dark brown sugarZest and juice of 1 lemon4 large eggs, lightly beaten125g carrots, grated115g sultanas115g walnuts, bashed into pieces using arolling pinZest of 2 orangesJuice of 1 orange1 rounded tsp bicarbonate of soda1 rounded tsp ground cinnamon300g plain flour1Take a square loose bottom Judge squarecake pan and grease with butter and linewith baking parchment and put aside.2Place the mashed banana, oil, sugar,eggs, carrots, sultanas, walnuts and thejuice and zest of the orange into a largemixing bowl and bring together with awooden spoon.34Sift the flour, bicarbonate of soda,cinnamon and the baking powder on topof the wet ingredients and beat in, usingan electric hand beater until smooth.5Turn the heat down to 160ºC andcontinue to bake for a further 30-40minutes or until the cake is cookedthrough. FeaturesBefore First UseThe Halogen Oven circulates air heated by halogen technology to cook foodquickly and economically, whilst still using conventional culinary techniques. Thiscirculated, hot, dry air method of cooking has many advantages:1. It can cook most dishes which would normally require a conventional oven.2. It can roast, bake, grill, steam, reheat or defrost.3. Electricity consumption is less than half that of a conventional oven.4. Food is cooked much more quickly than in a conventional oven.5. Food retains less fat, lowering calorie and cholesterol consumption.6. Carrying handles allow food to be brought to the table in the oven bowl.7. It is easily transported, so can be used away from home.8. Food is cooked evenly, without drying out, burning or smoke.9. A self cleaning function minimises manual cleaning.1. HEAT indicatorHalogen Oven and a time of 5 minutes, then unplug the Power Cable 8 and allow the Ovento cool.You might notice a slight burning odour while the Oven is running, aslubricants are removed from the heating element.Using The Oven1. Place the High Rack 5 or Low Rack 6 centrally in the Glass Bowl 3 . Thechoice of rack depends upon the food to be cooked, with the low rack beingused for larger items - see Cooking Guide.2. Place the food centrally on the rack, ensuring that it is at least 3cm from thewall of the Glass Bowl 3 , to allow maximum air circulation.3. Place the Oven Lid 4 securely and centrally on the Glass Bowl 3 . Leave theHandle 11 in the upright OFF position - note the handle label.4. Plug the Power Cable 8 into the power socket.5. Set the TEMP control 10 to the required temperature - see Cooking Guide.6. Set the TIME control 9 to the required time - see Cooking Guide.7. Immediately lower the Handle 11 to the ON position; both the POWERindicator 12 and HEAT indicator 13 will illuminate. The Oven will heat up rapidly and run for the set time minutes. The HEATindicator 13 will switch off and back on during this period as theOven maintains the set temperature. The POWER indicator 12will remain on until the timer switches off, when a bell will sound,to alert you that the cooking time has been reached.Note: The Glass Bowl 3 and Oven Lid 4 will become hot. Ensurethat the Oven is at least 8cm from any surface and take care not totouch the hot areas. Always use Oven mits when handling and liftby the Carrying Handles 2 . After removing the Oven Lid 4 , place it on a heatresistant surface, as the underside becomes hot during cooking.Note: Never immerse the Oven Lid 4 in any liquid, or allow liquids to get into thelid. Do not use a steel wool pad, abrasive material, solvents or cleaning powders;if scrubbing is necessary, use a nylon or polyester mesh pad.Cooking Techniques Roasting - place meats directly on rack.Toasting - place bread directly on rack; can also bring new life to stale food.Baking - place food in a metal or tempered glass baking pan, up to 30cm dia.Steaming - place food in an aluminium foil pouch with a small amount of water.Frying - dip food in cooking oil, allow excess oil to drain and place directly on rack,or in heat resistant container.Defrosting - set temperature to “Thaw” and check every 5-10 minutes.Cooking from frozen - reduce suggested temperature on packaging by 20 C,suggested cooking time by 30-50%.Remember to distribute food evenly in the Oven to ensure an even flow of airaround the food.You may wish to spray the racks with a non-stick food spray before use toprevent the food sticking.Cooking GuideNote: This is a guide only and supplements the guide on the lid.
