Complete any remaining steps and referenceall safety and usage information found in the Product Guide.Make certain that the holes in the cooking chamber are positionedtowards the front of the unit. This will align the holes in the cookingchamber with the holes in the smoker box so that smoke flowsproperly during use.Just like grandma’s cast iron skillet, the stainless steel CookingChamber must be seasoned prior to use. This is most important as itwill allow the cooking chamber to work properly. In addition, it willmake cleaning easier and inhibit rusting.Coat all interior surfaces of the cooking chamber with vegetable oil.If you use a vegetable spray, wipe down the cooking chamber afterspraying to ensure an even coat. Turn The Big Easy on, set the PowerLevel to (15), close the lid and allow it to heat until the vegetable oilburns off and stops smoking. The shiny finish of the stainless steelcooking chamber should now have a very dark brown or bronze color.You are now ready to cook. The more you use your Big Easy, thebetter it will cook. The darker, more-seasoned, the cooking chamberbecomes the hotter and the more evenly it will cook. If three dashes (---) are displayed, the Digital FoodThermometer is not fully engaged into the Jack. To measure temperatures in degrees Celsius ( C),press the Temperature Mode Button.Setting the Target Internal Food Temperature Press either the ( ) or (-) Temperature Control Button untilyour desired (TARGET) Food Temperature is displayed. Cook all raw beef, pork, lamb and veal steaks, chops,and roasts to a minimum internal temperature of145 F. For safety and quality, allow meat to rest for atleast three minutes before carving or consuming. Forreasons of personal preference, you may choose to cookmeat to higher temperatures. Cook all raw ground beef, pork, lamb, and veal to aninternal temperature of 160 F. Cook all poultry to a safe minimum internal temperatureof 165 F as measured with a food thermometer.Press and hold either the ( ) or (-) Temperature ControlButton for 2 seconds to scroll rapidly through thetemperatures.The LCD Food Temperature Display will alternate betweenthe (CURRENT) temperature of the food as measured by theDigital Food Thermometer and the (TARGET) temperatureyou select.Once your Target Food Temperature is reached, an audiblealarm sounds and the heat cycle is turned off. Reference the Temperature Chart to set the correctPower Level depending on outdoor weather conditions. If youare cooking on a colder or windy day, use a Power Level on thehigher side of the temperature range. 6OUTDOOR COOKING GUIDE30-Minute AutoClean (Power Level C)After removing your food return the cooking basket, warmingbasket, and half racks to The Big Easy. Close the lid, and pressthe ( ) Temperature Control Button until (C) is displayed on thePower Level Display. This will activate the AutoClean cycle.AutoClean is a high-heat cycle that will burn-off mostremaining food debris and conveniently power-off The Big Easyafter 30-minutes. After the cooking accessories have cooled, theywill be ready for brushing with a standard grill brush – similar tobrushing the cooking grates of an outdoor bbq grill. Remove anyremaining food debris from the bottom of the cooking chamberand empty the grease tray once the unit has cooled down.If preferred, the cooking accessories can be cleaned in adishwasher or washed with soap and water instead of being leftinside the cooking chamber while running the AutoClean cycle.Preheat (Power Level 15)Preheating is required only when using wood chips or pelletsinside the smoker box. When filling, shake the smoker box andtamp the wood chips to maximize the capacity and eliminate anyair gaps. This will allow the wood chips to start fasterand burn longer. When full, the chips or pelletsshould not be higher than the top of the smoker box.Return the filled smoker box to The Big Easy,close the lid, and set the Power Level to 15. Thewood chips or pellets will begin to smoke afterapproximately 15 minutes - depending on outsideweather conditions. Instead ofcharcoal or wood, The Big Easy uses the convenience of itselectric-powered TRU-Infrared cooking system. Smoke flavoris added using about a ½ lb. of wood chips or pellets inside thestainless steel smoker box.To begin, prepare the cooking basket with thefood you plan to smoke. 8OUTDOOR COOKING GUIDEReal wood chips will smoke for over an hour in the smoke box –depending on your Power Level selection. Real wood pellets willsmoke almost twice as long. When refilling the smoke box, leavea few burning embers to help start the new chips or pelletssmoking. If you have no embers left or want to start with a fullbox of fresh chips or pellets, simply fill no higher than the top ofthe smoker box and preheat on Power Level 15 for approximately15 minutes or until they begin to smoke. Don’t forget to turn thePower Level back to the original setting. The 15 minutes of cooktime at Power Level 15 will not affect your overall cookingresults.Slow Smoking (Power Levels 4-8)The Big Easy Electric Smoker Roaster was designed to makeoutdoor cooking faster and easier. When extra time is available,you can enjoy cooking ‘slow-and-low’.Note: When slow smoking, use the cooking racks to raise thefood two levels off of the bottom of the cooking basket.Additional Operation Notes Each time a button is pressed, an audible beep sounds. Todisable this feature, press and hold the Temperature ModeButton for two seconds. 9OUTDOOR COOKING GUIDEFrequently Asked Questions1) Do I need to soak the wood chips in water?No. Soaking the wood chips in water before use will notextend the smoking time; only lengthen the time before theystart to smoke.2) Can I cook a frozen turkey?No. Turkey must be completely thawed and you shouldalways remove the giblets, neck and anything from inside thecavity before cooking.3) How should I prepare poultry?The turkey or chicken must becompletely thawed and you shouldalways remove the giblets, neck andanything from inside the cavity beforecooking. Remove the metal or plastictie that may be used to bind the legstogether before putting the turkey in thecooking basket. Opening the legs willallow the turkey to cook evenly andmaintain its position inside the basket.Always set the turkey or chicken insidethe basket with the breast up and thelegs down so that it can cook evenly.4) Can I cook a turkey with stuffing inside?The USDA recommends cooking stuffing separately foroptimal safety and uniform doneness. One of our favorites to use withturkey or chicken is a Creole seasoning with salt, red pepper,garlic and other spices found readily at any grocery store.Try to avoid rubs with high sugar content if you are cookingat Big Easy Roasting Power Levels. When preparing friedturkey or rotisserie chicken, you can rub the skin with peanutor canola oil before using a dry rub if desired. The infraredheat will keep your food moist and juicy on the inside.6) How long will it take to cook?With The Big Easy, food is done once it reaches properinternal temperature. Always use the Digital FoodThermometer to monitor internal temperature and rememberthese USDA guidelines for proper use:1) Insert the probe into the thickest part of thefood - not touching bone, fat or gristlebefore lowering into the cook chamber.Place the digital food thermometercord to the left side of the cookingchamber before closing lid andinserting into the Jack.2) After cooking, check the temperature inseveral places to make sure the food isevenly heated.3) Compare your thermometer reading to the USDAguidelines printed inside the back cover of this guide todetermine if your food has reached a safe temperature.4) Make sure to clean your food thermometer with hot,soapy, water before and after each use. If cooking at PowerLevels in the Big Easy Smoking range, anticipate cookingtimes to be twice as long as a general guideline.7) Can I use drippings for gravy?Yes - if they are properly prepared. Before cooking, youmust insert a food-safe aluminum liner into the removablegrease tray to catch the drippings. Aftercooking, the drippings must be heatedon a stovetop to the propertemperature for doneness (180 F or82 C). Never serve the drippingsdirectly from the removable greasetray. When youremove the basket from the cooking chamber, you will betempted to want to immediately remove the food from thebasket. Placeinto the cooking basket and cook until the internal temperature is145 F for serving cubed or sliced.To serve ‘pulled pork’, cook until the internal temperature reaches190 -200 F. Cook until atooth pick can easily go into the center of the potatoes. As a generalguide, a large potato will cook in the time it takes to cook a turkey ora roast.Do not puncture or cut the skin when cooking sweet potatoes so thatthe natural sugar will remain inside the potato. The natural sugar canleak onto any meat being cooked below and caramelize into a darkcrust. After cooking, cut in half lengthwise and add butter and brownsugar as desired.Easy Idea: Try rubbing potatoes with vegetable oil and seasoningwith kosher salt. The oil will help the salt stick.Corn on the CobbWash and clean corn in the husk, but do not remove the husk. Soakcorn in cold water for 30 minutes or up to an hour.
