Morning is the best time of day. Notthat I’m a morning person—I’m definitelynot. I’m a night owl. I love the morningbecause it holds the seeds of the day, and thepossibilities are too immense to imagine.Whatever you can envision into being in themorning is what the day can become. Bymid-morning the day has taken on acharacter. And by the late night, as I try tosqueeze out every last drop of experience, theday gets brittle, old, and tired. But in theearly morning, anything can happen.That’s what it was like growing upwith my family. My father was a wild,inspired chef, among other things, with animmense passion for food, and yes, I’mgrateful to have inherited that. He woke usup with unforgettable breakfasts and anexcitement so palpable, so generous. We atehis freshly gathered wild mushrooms sautéedin butter on toast. And enormous pancakesthat filled a 2-foot cast-iron pansuspended on chains over a fire in thebackyard. So it was only natural for me towrite this book—out of a lifelong passion forfood and for the simple delight of sharing itwith others.As a child I was very robust and healthy.However, as an adult I began to bechallenged with chronic fatigue, adrenalfailure, allergies, and digestive problems. Atone point when I was very weak and ill, Inoticed there was an immediate and directconnection between what I ate for breakfastand how my day went. Of course all themeals are important, but I observed a clearresponse to breakfast in my body. It wouldaccept the food with a warm feeling ofhappiness. Or it would shut down—a lot or alittle. Call it a food reaction or anintolerance, perhaps triggered in part by anemotion. cravings, muscle aches, moodiness, andconfusion. I muddled through the day as bestas I could. The only real solution was to restand start over the next day. In time I was ableto identify clearly the foods that my bodyaccepted—fresh vegetables, tart fruits,unprocessed meats, nuts, eggs, and unrefinedoils. The foods causing my body to shut downwere always the same: refined carbs, grains,gluten, processed foods, milk, cheese,vegetable oils. Oh, and sugars of all kinds—even fruit sugars.A NEW CONCEPT IN BREAKFASTA good breakfast sets the tone for yourwhole day. After ten years on a diet free ofgrains, dairy, and sugar, my food reactions aregone. There’s no morning brain fog,confusion, or any of the old discomforts. Nowthat I enjoy stable energy levels through theday and better health than I’ve had indecades, I have become a passionate Paleoenthusiast. After all, it makes sense to eat thefoods we are genetically adapted to eat. Thatmeans eating only real food. Some peoplemight call it a limited diet. What? No bagelsand cream cheese? No milk, orange juice,croissants, or Cheerios? But as you’ll see onthese pages, when one thinks outside the boxa little bit, there is no deprivation on this diet.On the contrary—every meal is pure pleasure.My senses are clearer, my life is moreenjoyable, and I accomplish more with lesseffort.Our health is where the rubber meetsthe road. We can make the choice to listen toour bodies and harmonize with the laws ofNature. Or we can fight and suffer theconsequences. Those are the two choices.
