Product CareDaily CareAlthough CUTCO cutlery is dishwasher safe, (see below) we recommend you carefully hand-wash yourproducts in hot water, using a milddishwashing liquid. Dry them afterwashing. Allowing items to soak indishwater may cause staining from themineral content in some water.When placing your cutlery in thedishwasher please be aware: The edges can be damaged as theyhit each other. The cutlery can fall through therack and become damaged restingon the heating element or gettingcaught in the washing mechanism. The sharp edges of the cutlery candamage the protective plasticcoating of the machine.If you do place your CUTCO in thedishwasher: KEEP SAFETY IN MIND.Lay your knives flat on thedishwasher rack. If you must putthem in the flatware basket, doso with the points down so there’sless chance of grabbing the bladeswhile unloading. Varying dishwasher detergent formulas and water mineral content canaffect the resulting shine of yourcutlery. If you choose to use thedishwasher, we recommend experimenting with different detergentbrands, styles, rinse agents andsoftening additives (for harder water)to find the best combination for yourdishwasher.4Keeping Knives SharpDo not cut on porcelain, glass ormetal. These surfaces will quicklydull your knives. Use polypropylenecutting boards to keep knife edgessharp longer. Never use your knife asa screwdriver or other mechanical tool.StorageTo keep your knives sharp and keeptheir finish, store them in wood blocksor in trays.HeatDo not expose CUTCO to openflames or other sources of intense heat.Excessive heat can destroy thetemper of the steel blades, and melt orburn the handles.Stain ResistanceCUTCO is made from high-carbon,stainless steel that is mirror or satinpolished. However, occasional minorstaining can result from contact withcertain foods or where the householdwater has a high mineral content.Should occasional stains appear, usea non-abrasive polishing compoundsuch as Flitz to remove them. Applya small drop on a soft cloth and polishthe stained area. Remove the excessFlitz with a dry cloth. However, contact with someproducts like mustard, food coloringand carrots may result in a slight discoloration. To remove these stains,clean gently with a mild liquid abrasivecleanser or run through the dishwasher. This will bring back their sheen andnot harm the handles. See tips underStain Resistance - page 4.under normal household use. Whenthey do need sharpening, do not usethe CUTCO Sharpener or any othersharpening service. It will ruin thespecial edge. How To Carve A Turkey Or Chicken1. Insert Carving Fork (pg. 14) intothe meaty part of the drumstick tohold it firmly. Place 9" Carver (pg. 15)between drumstick and thigh and cutthrough skin to joint (Figure 1).Next, place Carving Knife betweenthigh and body and cut through skinto joint. Remove entire leg section bypulling outward and using the pointof the knife to disjoint it. Then separate the thigh from the drumstick atthe joint.CarveLike A Pro Properly cooked meat is the key tosuccessful carving. If meat is cookedat too high a temperature it may forman outer crust that makes carvingdifficult. After cooking, let the meat set fora few minutes before carving. Thisallows the meat to firm up and makescarving easier. Remove any string and skewersfrom a roast just before carving.For a rolled roast, you may want toleave one or two strings in place ifthere is a possibility that the roastmay come apart while carving. Always carve all meat across thegrain (fibers of the meat).2. Disjoint wing (Figure 2) and separate from body in the same manner.3. Make a horizontal base cut acrossthe bottom of the breast with theCarving Knife (Figure 3).4. Starting parallel to the breastbone,slice down through the meat to thehorizontal base cut. Lift off each slice,holding it between the knife and fork.Continue slicing the breast by beginning at a higher point each time untilthe breast bone is reached (Figure 4).1 Use the Carving Fork or TurningFork to hold the meat in place. The knife and fork you use forcarving depends on the size of themeat. Use the Carving Fork witheither the 9" Carver or 93 4" Slicerwhen carving a large roast, turkey orham. After the first cut is made, the angleat which the knife is held shouldnever change. Carving a large roast, hold meat inplace with the Carving Fork (pg. 14).Cut between muscles and around boneswith the tip of the 9" Carver (pg. 15) toremove one solid section of pot roast ata time (Figure 1). Try to separate solidpieces of meat at natural dividing seams.2. After removing a section, turn it on itsside so that the meat fibers are parallelto the cutting board (Figure 2). Thismakes it possible to carve across grainof meat.3. Holding meat with Carving Fork,carve slices using the 9" Carver(Figure 3).Shank Half (pointed end)With the shank opposite the carvinghand, turn the ham so the thick, meatyside is up.122. Place this boneless section on cuttingboard. Make perpendicular slices with9" Carver (Figure 2).33. On remaining portion, cut around legbone with tip of 9" Carver and remove.Turn meat so the flat side is down andmake perpendicular slices as describedabove (Figure 3).Boneless31. If necessary, remove a wedge-shapedslice from large end so roast will have aflat base.122. Insert Carving Fork below top rib.Using 9" Carver, carve across the face ofthe roast from rib to rib bone (Figure 1).3.
