This salad is da bomb because it’s looksall kaley but doesn’t taste all kaley. Becauseit sounds like rabbit food but doesn’t tastelike rabbit food. I mean holy moly .thisensalada is a downright dream boat. A realtreat for the taste buds. The toasty almonds,the sweet golden raisins (which may I add arefar superior to regular raisins), the simplelemony dressing I can’t even.

MY LATEST VIDEOSI think this would be over the top fab withavocado and some feta, but I wanted to keepit vegan-friendly for Alchemy customerssince some of our other salads are full o’ feta.Avocado browning in a kale salad kind ofruins the whole yumtastic image of thishealthy salad, but feel free to add it in athome if you’re eating it the same day!Speaking of Alchemy, be sure to head on overto The Micro Harvest for a little Q & Aaction!

There’s definitely some plant-based proteinin this bad boy from the quinoa, but I liketopping it with a Luna burger (or whateverveggie burger you prefer) when I’m feelinghangry pants. I’ve been loving having this onhand in the fridge for lunches since it getseven better over time as the dressingmarinates. WIN.

I N S T RU C T I O N S1Whisk together dressingingredients and set aside.2Place chopped kale in a largebowl. Pour dressing on topand massage dressing intoleaves for a couple of minutes(using your hands) until kale isbroken down.3Add cooked quinoa, raisins,almonds, peppers, andavocado. Toss to combine.
