How to assess the histamine potential of compound productsGenerally, only basic food ingredients and additives are listed here. Rule of thumb to estimate thehistamine potential of complete meals or othercompound products and preparations: When allingredients are tolerated, and the product is notmicrobially fermented or matured, then the product is safe – as long as it is in a very fresh stateand not perished.
