Pine River Senior Board Meetings - Held on the 2nd Wednesday of every other month. The 2020dates are September 9 at Eagle Park at 10:30 am and November 4, remains tentative due to Covid-19.Everyone is welcome to attend.Pine River Public Library - NOW OPEN Monday - Friday 12 - 6pm, vulnerable 12 - 1pm. For moreinformation call 970-884-2222. The library also offers curbside service; visit www.prlibrary.org for full details.Stretch & Flex is a balance and coordination based exercise class that takes place every Wednesday &Friday from 9:00 a.m.- 10:15 a.m. for FREE. Recipe CornerTaco Soup1 c chopped onion1 can Ro-tel tomatoes1 lb ground beef1 pkg. dry taco seasoning mix (McCormick Brand)1 can whole kernel corn undrained1 pkg dry ranch dressing mix ( Hidden Valley)2 cans pinto beans, undrainded1 can stewed tomatoesBrown beef and onions together. Mix all ingredients and simmer for 30 min. to 1 hour. Serve with cornbread.Toppings for soup: grated cheese, chopped green onions, sour cream, crushed chips. Use one or all.Almost Swedish Meatballs1 lb ground beef1/4 tsp pepper (or to taste)1/2 onion, chopped1 dash garlic powder1 T. ground cumin (or more)1 can cream of mushroom soup1/2 tsp. salt (or to taste)1 can milkIn an 11 - inch skillet brown ground beef with the onion. Add cumin, salt, pepper and garlic powder. Once meatis done, add cream of mushroom soup and one soup can of milk. Mix well, simmer until thickened to a gravyconsistency.
