That’s the beginning of ascrumptious seafood feast. Before crawfish seasonstarts to wind down, you may want to throw in somedelicious Louisiana sweet potatoes and you’ve addeda new twist to the pot!“One day I was boiling crawfish and I just threwthem in. It was so good!” said Rene Simon, Directorof the Louisiana Sweet Potato Commission.The Louisiana Sweet Potato Commission ispreparing a tutorial on how to add the sweetness ofyams to any seafood boil whether its crawfish orshrimp. “There’s nothing better than Louisiana sweetpotatoes added to crawfish or shrimp because it addssome sweetness to it. It’s a nice little balance with thespiciness,” added Simon.The sweet potatoes used for boils are smaller thanregular sweet potatoes.” A lot of times, the smallerones are culled out, but smaller sweet potatoes can beused in boils. It’s another potential market for smallerpotatoes that we can capture,” said Simon.Simon says Louisiana has 10,000 acres of sweetpotatoes which is an increase of about 3,000 acressince 2010.Venoy Kinnaird, a sweet potato grower outof Morehouse Parish says the sweet potato wasunderrated for many years, but that is starting tochange. “People are catching on to sweet potatoes.They’re eating the sweet potato fries now andcasseroles. Also, people are doing a better job atcooking and preparing them. They need to be cookedright,” said Kinnaird.Simon adds that regular white potato consumptionis decreasing and sweet potato consumption isincreasing because of the health benefits. Accordingto the U.S. Department of Agriculture, a mediumsized sweet potato is about 130 calories. Sweetpotatoes are also a good source of fiber, potassium,calcium, vitamins A and C among other benefits.Cooking the sweet potatoes with the crawfish isvery similar to what you do with the white potatoes.“We just want people to be open to trying somethingnew. Itwas discovered in Michigan in 2002and is now in 25 states, includingLouisiana. EAB is a serious pest toall types of ash trees and the whitefringetree, but does not attack otherhardwoods or pine.On April 28, 2016, the USDAnotified the Louisiana Departmentof Agriculture & Forestry (LDAF)of the confirmation. The identifiedspecimen was trapped by theUnited States Forestry Service(USFS) which along with NaturalResources Conservation Service(NRCS), LDAF Forestry Division,and USDA Animal and PlantHealth Inspection Service PlantProtection and Quarantine (APHISPPQ) comprise the agencies thatare trapping for EAB statewide.The four agencies have a total ofmore than 470 EAB traps deployedthroughout the state.In addition to the trapping andsurvey program, the LSU AgCenterand USFS began a biocontrol releaseprogram early last year to aid in thecontrol of EAB.
