ABOUTCIA SAFEThe Culinary Institute of America’s Health and Safety Plan is based onour continuing priority to ensure the health and safety of our campuscommunity in light of the COVID-19 pandemic. Originally developed forthe phased re-opening of our campuses after our 2020 closure, this planhas evolved as conditions related to the pandemic have changed. All along,however, the theme of “Shared Accountability For Everyone”, or CIA SAFE,has been core to our efforts.This plan builds on our experiences during the pandemic, and is informed byCDC guidance as well as guidance and mandates from the Departments ofHealth in the localities in which we operate. As has been true throughout thepandemic, elements of this plan are subject to change as conditions evolve.The entire CIA community is expected to be an active participantin this plan, as a culture of personal and collective accountabilityis everyone’s responsibility.IN THIS REGARD, ALL STUDENTS, FACULTY, AND STAFFWILL BE REQUIRED TO: Have on file with the College, prior to the start of the semester, a proof ofvaccination against COVID-19 or have received an accommodation. Sign the CIA SAFE Pledge (students) or Acknowledgment of Best Practices(employees) owning their individual and collective responsibility to adhereto the CIA’s health and safety protocols. Monitor for symptoms of COVID-19, or exposure to someone confirmedto have COVID-19, and immediately contact Health Services (students) orHuman Resources (employees) for guidance. HEALTHANDSAFETYGuidelines have been implemented that are consistent with best practicesin a college environment.PERSONAL PROTECTIVE EQUIPMENTFace Masks Unvaccinated individuals who have received an exemption to the vaccinerequirement must always remain masked in any indoor location, exceptwhen actively eating. The only other exceptions are when in a person’s ownResidence Hall room (students) or alone in a private office (employees).Further, these individuals must adhere to CDC guidance and wear a maskoutdoors when unable to maintain physical distancing. Masks are always required to be worn by all —regardless of vaccinationstatus—in any class setting, including: kitchens, classrooms, restaurants, andlabs, as well as in any health services or counseling settings. Beyond this minimum requirement, further mask requirements varyby campus location based on local conditions and County guidance.Students and employees are responsible for adhering to the maskrequirements for their campus, which are posted on the FAQs on theStudent and Employee portals. Masks may also be required at certain campus gatherings. This informationwill be provided in advance of affected events and programs. Face masks should meet CIA guidelines as available in the Student andEmployee FAQs, which can be found on the Portal. Like the rest of this plan, mask guidance is subject to change at any timebased on internal and external factors, and local, state, and federal guidance.Gloves Gloves will continue to be emphasized for ready-to-eat foods in all kitchensand foodservice locations.HEALTH AND SAFETYTHE CULINARY INSTITUTE OF AMERICA SPRING 2022 HEALTH & SAFETY PLAN 5

HEALTHANDSAFETYHEALTH AND SAFETYCLEANING, DISINFECTING, AND AIR PURIFICATION The frequency of cleaning and sanitation in common areas remainsat an increased level. Hand sanitizing stations are located throughout each campus. Isolation Rooms will be cleaned and disinfected after being vacated. BlueZone by Middleby air purification units which feature a patentedtechnology that kills 99.9995% of viruses and other indoor contaminantshave been installed in restaurants and several other key locationsthroughout our campuses.THE CULINARY INSTITUTE OF AMERICA SPRING 2022 HEALTH & SAFETY PLAN 6

MONITORINGANDSURVEILLANCEMonitoring and surveillance is key to bothidentifying any instances of actual or suspectedillness, as well as tracking and evaluating anyinstances of actionable exposure.SELF MONITORING It is incumbent on all members of the CIAcommunity to self-monitor for symptomsconsistent with COVID-19, including: fever orchills; cough; shortness of breath or difficultybreathing; aching throughout the body; fatigue;headaches; new loss of taste or smell; nauseaor vomiting; diarrhea; etc. If experiencing theseor other symptoms, students should remain intheir rooms or off-campus housing and contactHealth Services for guidance, and employeesshould not report to work, call in sick to theirsupervisor, and contact Human Resources formore information. MONITORINGANDSURVEILLANCEVACCINE REQUIREMENT Students, faculty, staff, and regularly scheduledon-site contractors are expected to be fullyvaccinated prior to the start of the semester.Students should upload a copy of theircompleted vaccination record to Medicat—the student health records portal. Employeesshould submit a copy of their completedvaccination record to mybenefits@culinary.edu. The CIA policy allows for exemptions.Accommodation forms can be found onthe student and employee portals. Anyonereceiving an approved exemption is requiredto remain masked in indoor areas, as well asoutdoors when physical distancing cannot bemaintained, as described on page 5 of this plan. The CIA accepts any vaccine authorized bythe WHO or FDA, including those vaccinesauthorized for emergency use. If receivingthe Pfizer or Moderna vaccines, please notea person is considered fully vaccinated twoweeks after having received their second dose. MONITORINGANDSURVEILLANCECAMPUS ACCESSThe CIA’s campuses are fully open, with visitorsand members of the public being required toadhere to CIA health and safety protocols asin force at the time of their visit. A vaccinatedstudent, employee, and regularly-scheduledonsite contractor community, coupled with airpurification practices and technologies, minimizesthe risk of transmisson. Students may welcome visitors to campusand these guests will not be required tobe pre-registered. In Hyde Park and atGreystone, overnight guests are not permitteduntil further notice.
